Located within the landmark new Sydney Fish Market, Gyokuu offers an intimate omakase experience where precision, seasonality and craftsmanship define every service. Working in collaboration with Liteco as lead designers, Konnos contributed to the creation of a refined dining environment that reflects the discipline and artistry of Japanese culinary tradition.

The design embraces simplicity through a restrained palette of natural timbers, textured finishes and carefully considered detailing, creating a calm and immersive setting. Every element was thoughtfully composed to enhance the theatre of the chef's interaction with guests while maintaining an atmosphere of quiet sophistication. The result is a space where the dining experience remains the focal point, allowing the quality of the cuisine and the craftsmanship behind each course to take centre stage.

The completed venue delivers a contemporary interpretation of traditional omakase dining, balancing authenticity with modern design to create an intimate hospitality experience within one of Sydney's most significant new culinary destinations.
